Ers 1800 mae'r Teulu Cavalieri wedi ymrwymo i dyfu gwenith mewn caeau a ddewiswyd yn bwrpasol yng nghanol Apulia. Ni sicrhaodd yr argyfwng amaethyddol yn dilyn uno'r Eidal (1861) i'r Teulu y cysuron arferol a ddeilliodd hyd hynny o dyfu'r gwenith caled, a dyna pam yr oedd yn rhaid mentro yn gyntaf i'r fasnach dramor yn y gwenith penodol hwn, ac yna wrth adeiladu meini melin a gynlluniwyd ar gyfer melino gorau'r gwenith caled. Ym 1872 y dechreuodd Andrea Cavalieri y fenter fasnachol hon.

Gyda threftadaeth profiadau ei dad yn tyfu a melino gwenith caled, agorodd Benedetto Cavalieri, ym 1918, cynlluniodd y Ffatri Felin a Phasta Benedetto Cavalieri gyda'r bwriad clir i gynhyrchu Pasta Dewis Cyntaf gyda'i wenith caled 'mân a dethol' o'r bryniau heulog Apulia. O'r diwrnod hwnnw ymlaen yr arwyddair yw:

“Pasta Dewis Cyntaf gydag Enw a Chyfenw”

Ers sefydlu mae Benedetto Cavalieri yn anelu at arloesi ac ansawdd gan ddefnyddio'r peiriannau diweddaraf ar gyfer tylino, gwasgu a lluniadu. Er mwyn atal pasta rhag sychu ar y strydoedd, arfer arferol ar y pryd, cyflwynodd system newydd o'r enw “Metodo Cirillo”, a oedd yn cynnwys sychu pasta mewn ystafelloedd arbennig, gyda gwresogydd d?r poeth a ffan, y mae ei cafodd amseroedd eu nodi gan brofiad y Capo-pastaio.

Yn ystod y ’50au, mae Benedetto yn trosglwyddo’r baton i’w fab Andrea sy’n rhoi strwythur rheolaethol i’r Cwmni ac yn trosglwyddo awydd y teulu am basta i’w fab Benedetto, y perchennog presennol.

Mae Benedetto wedi bod yn rhedeg y cwmni ers dros 30 mlynedd, gan ennill a chyrraedd nifer fawr o wobrau cenedlaethol a rhyngwladol. Mae'n atgyfnerthu'r presenoldeb ar farchnadoedd tramor.

Mae Andrea, sy'n cynrychioli'r bedwaredd genhedlaeth o wneuthurwyr pasta, yn dod i mewn i'r Cwmni yn 2007.

Ynghyd â'i dad mae'n cyflwyno traddodiad y teulu gyda brwdfrydedd a difrifoldeb mawr. Ers 2005, mae Pastificio Benedetto Cavalieri wedi'i benodi'n Ganolfan Ddysgu Bwyd Araf Prifysgol Gwyddorau Gastronomig Pollenzo (Piemonte). Mae myfyrwyr o'r pum cyfandir yn mynychu'r seminarau wythnos thematig ar wneud pasta.
